Mono headset or stereo?
A mono headset covers one ear and leaves the other open, so you can hear the people around you. It's the usual pick for reception desks, retail counters, warehouses and driving. A stereo headset covers both ears, which blocks out the room and makes it easier to concentrate on a busy floor or in an open-plan office.
Many models come both ways on the same headset, so a mono headset with microphone and its stereo version usually share the same mic, battery and connection. Choose by where you work, not by sound quality.
The microphone matters more than the speakers
The people on the other end of your call only ever hear your microphone. A boom mic that sits close to your mouth picks up your voice and far less of the room, which is why almost every business headset uses one instead of a mic built into the earcup.
"Noise canceling" on a headset usually describes that microphone: it filters background sound out of what your callers hear. Active noise cancellation, or ANC, is a separate feature that quiets the room in your own ears. Plenty of enterprise headsets and collaboration headsets have a noise-canceling mic without ANC, which is the part that matters for sounding clear.
